Extensively grown in the United States, Squash was one
of the staples of the American Indians & Europeans.
They can be sliced and sauteed, skins and all, or added to soups.
The most tender of them are often eaten raw.
The soft-skinned squashes are an excellent source of Vitamin A.
Like pumpkin, squash can be used in pies.
The seeds are also tasty if roasted and salted.
