| Extensively grown in the United States, Squash was one of the staples of the American Indians & Europeans. The most popular soft-skinned "Summer " varieties include zucchini & pattypan or scallop. They can be sliced and sauteed, skins and all, or added to soups. The most tender of them are often eaten raw. The soft-skinned squashes are an excellent source of Vitamin A. Like pumpkin, squash can be used in pies. The seeds are also tasty if roasted and salted. ~ ~ ~ ~ ~ ~ ~ ~ ~ ~ Butternut Squash is a type of winter squash. This fruit has a sweet, nutty taste that is similar to pumpkin. It has yellow skin & orange fleshy pulp. When ripe, it turns increasingly deep orange and becomes sweeter & richer. In addition to roasting and toasting, it can also be pureed or mashed into soups, casseroles, breads & muffins. It is a good source of fiber, vitamin C, manganese, magnesium and potassium.
